Cheryle Hanna's Potato Salad

"No summer meal is complete without potato salad. My mother would make it year round. Vertie found potato salad a quick addition to the evening meal. Because she make it afer work it did not have long in the refrigerator, so it was warm. The traditional serving method is chilled but I like unchilled–it reminds me of her."


5 medium white potatoes, diced into small chunks
3 eggs
1/2 cup each finely diced green pepper and onion
1/2 cup miracle whip salad dressing
1 Tbsp yellow mustard
1/2 tsp salt and pepper
1/4 cup sweet relish


Boil the eggs and potatoes in salted water until the potatoes are tender, did not over boil or your will have mashed potato salad. in a small bowl mix the salad dressing, mustard, salt and pepper.

Place the dice veggies, cooked potatoes, relish and diced eggs in a bowl and pour the dressings over the mixture and stir. Chill (or not) and enjoy.

This recipe can to doubled or tripled with no problem.
