Only the "keepers"

Stewed Cranberries with Orange


2 cups (500 mL) fresh or frozen cranberries
1/2 cup (125 mL) sugar (or as needed, depending on the sweetness of the cranberries)
2 tablespoons (30 mL) brandy (optional)
Zest and juice of one orange
1/2 cup (125 mL) orange juice (store bought)
1 teaspoon (5 mL) salt


Combine all ingredients in a medium sized saucepot and place over medium heat. Cook the mixture uncovered until it resembles a jam like consistency, about 35 to 40 minutes. Allow the mixture to cool slightly. Serve warm.
