Mocha Brownies

Ingredients
  • 1/3 cup butter
  • 4 oz bittersweet or semisweet chocolate, chopped
  • 2 oz unsweetened chocolate, chopped
  • ¾ cup granulated sugar
  • 2 eggs, 1 at a time
  • 2 tsp vanilla
  • 4 tsp instant coffee granules dissolved in 1 tbsp (15 ml) hot water
  • ½ cup all-purpose flour
  • pinch salt
Method
  1. In saucepan over medium heat, melt together 1/3 cup butter, 4 oz bittersweet or semisweet chocolate, chopped, and 2 oz unsweetened chocolate, chopped. Let cool for 10 minutes.
  2. Whisk in 3/4 cups granulated sugar, 2 eggs, 1 at a time, 2 tsp vanilla and 4 tsp instant coffee granules dissolved in 1 tbsp hot water. Stir in ½ cup all-purpose flour and pinch salt.
  3. Scrape into greased 8-inch square metal cake pan; bake in centre of 350°F oven for 25 to 30 minutes or until cake tester inserted in centre comes out with a few moist crumbs clinging to it. Let cool in pan on rack.

Makes 16 brownies.
