Pumpkin Muffins from the Experimental Farm

Ingredients

1 ½ cups (375mL) whole wheat flour
1 tbsp. baking powder
½ tsp. ground nutmeg
½ tsp. ground cinnamon
1/3 cup brown sugar
1 egg
¾ cup milk
½ cup pumpkin puree
¼ cup melted butter
½ cup raisins or dried dates

Method
  1. In a bowl, mix all dry ingredients.
  2. In another bowl, beat the egg with all the liquid ingredients.
  3. Add the liquid ingredients to the dry ingredients and quickly stir all the ingredients together.
  4. Pour muffin mix in a greased muffin tin.
  5. Bake for 20 minutes at 400F
