Sesame seeds are packed with protein; toasting brings out their nutty flavor. Tahini is a paste made from ground sesame seeds with a consistency similar to peanut butter; look for it in the Asian section of your grocery store.
Ingredients
3 tablespoons sesame seeds ¼ cup tahini ¼ cup reduced-sodium soy sauce 3 tablespoons freshly squeezed lime juice 2 tablespoons rice-wine vinegar 2 tablespoons sugar 12 ounces pasta, such as linguine or angel hair, or somen noodles 8 ounces green beans, trimmed and thinly sliced lengthwise 1 tablespoon dark sesame oil 1 medium cucumber, peeled, seeded, and cut into matchsticks (about 3 inches long) Salt and freshly ground pepper 2 scallions, including green parts, thinly sliced, for garnish
Method
Toast the sesame seeds in a small dry skillet over medium-high heat until golden, shaking skillet to color evenly. Let cool.
Make dressing: In a medium bowl, whisk together tahini, soy sauce, lime juice, vinegar, sugar, and 2 tablespoons sesame seeds.
Bring a large pot of water to a boil. Add noodles; cook until almost tender according to package instructions. Add green beans to pasta; continue cooking just until bright green and tender, about 30 seconds.
Drain; transfer noodles and beans to a large bowl. Add sesame oil; toss to coat. Add dressing and cucumbers; season with salt and pepper. Toss to combine. Serve warm or chilled, garnished with scallions and remaining tablespoon sesame seeds.
