These spicy cookies flatten slightly as they bake. They’re crackled on top, crisp on the outside and slightly soft in the center.
Ingredients
¾ cup shortening
1 cup granulated sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
2 tsp baking soda
¼ tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cloves
Method
In a large bowl, cream together shortening and sugar. Beat in egg and molasses. In a separate bowl combine flour, soda, salt, and spices; blend into creamed mixture. Shape into small balls (1 inch/2.5 cm diameter). Roll in sugar.
Place 2 inches (5 cm) apart on greased baking sheets. Bake in 350°F (180°C) for 8 to 10 minutes until golden. Don’t over-bake; cookies should be slightly soft when removed from oven. Cool on baking sheets for a few minutes, then transfer to racks to cool completely. Makes about 40 cookies.
